Theslicershallbecleanedandsanitizedatintervalstocomplywithnational,stateand/orlocalhealthcodes.

Clothwipes
Note: Sanitizer concentration shallcomply with Section 4-501.114,Manual and Mechanical Warewashing
Equipment, Chemical Sanitization – Temperature, pH, Concentration, and HardnessoftheFDAFoodCode.Ifa
chemicalsanitizerotherthanchlorine,iodine,orquaternaryammoniumisused,itshallbeappliedinaccordance
withtheEPA-registeredlabeluseinstructions.
Procedure:
CAUTION: Use extreme care when cleaning blade.
1. Closetheslicerthicknesscontrolknob.
2. Turnthesliceroffandunplugpowercordfromthewalloutlet.
3. Pulltheproducttabletothefrontoftheslicer.Ifitisanautomaticslicer,makesuretheengagement
knobisinthemanualpositionbeforepullingtheproducttabletothefrontoftheslicer.
4. Unscrewtheredhandlefromthepusherandremovethepusherfromthepusherarm.Unscrewand
removethepusherarmsliderodfromtheproducttable.Loosentheproducttablelockingknoband
removethetable.The product table cannot be removed unless it is fully forward and the thickness
control knob is completely closed.
5. Removethecenterplatebyliftingthecenterplatelockingknobatthetopofthecenterplateandlift
fromtheslicer.
6. Pre-scrapefoodfromremovableproducttableandcenterplate.
7. Washcenterplate,producttable,redhandle,pusher,pusherarm,andsliderodinhotdetergentsolution.
Thesharpenercanbesubmergedinthehotdetergentsolutionforcleaning.
8. Rinsethecenterplate,producttable,redhandle,pusher,pusherarm,sliderod,andsharpenerinfresh,
hot,potablewater.
9. Submergethecenterplate,producttable,redhandle,pusher,pusherarm,sliderod,andsharpenerin
sanitizersolution.Setpartstothesideonasanitizedsurfaceandallowtoairdry.
